Pizza Tots

RECIPE: PIZZA TOTS Servings: 9-12 large tots INGREDIENTS 1 small block low-moisture mozzarella 12 slices pepperoni 3 1/2 cups hash browns 1 tablespoon Italian seasoning 1 tablespoon salt 1 tablespoon garlic powder 1 egg, beaten Oil for frying Marinara sauce for dipping PREPARATION 1. Cut block of mozzarella into small cubes, about a 1/2 inch (1.5cm). 2. Cut pepperoni in half. 3. In a mixing bowl, combine hash browns, Italian seasoning, salt, garlic powder and egg. Mix well. 4. Grab a small handful of the hash brown mixture and flatten out in the palm of your hand. 5. Place 1 or 2 slices of pepperoni and a cube of cheese on top. 6. Fold the hash brown mixture around the cheese and pepperoni. Squeeze and compress until the mixture completely covers the filling and stays in a cylindrical form. Repeat until all of the mixture is used. 7. Freeze tots for 20+ minutes. 8. In a large saucepan, heat oil to 350˚F (180˚C). Fry tots in batches, three at a time, until golden brown. Cauliflower Nuggets

Here is what you'll need! Servings: 12 nuggets INGREDIENTS 1 head of cauliflower, steamed 1 egg ¾ cup bread crumbs ½ teaspoon salt ¼ teaspoon pepper 1 teaspoon garlic powder 2 tablespoons dried parsley 12 (1-inch) cubes cheddar cheese 1 cup flour 2 eggs, beaten 1 cup bread crumbs PREPARATION 1. Preheat oven to 350°F/180°C. 2. In a bowl, mash the cauliflower until slightly combined. 3. Add the egg, ¾ cup bread crumbs, salt, pepper, garlic powder, and parsley, and mix with a fork until combined.  Chill for 10 minutes. 4. Form the mixture into nuggets with a cube of cheddar cheese in the center.  Pack them tightly. 5. Roll each nugget in flour, then egg, then bread crumbs.  Place on a baking sheet covered in parchment paper. 6. RECIPE: Mozzarella Stick Onion RingsMakes 9-12 Ingredients 2 large white onions 3-4 slices mozzarella cheese 2 cups flour 5 eggs 2 cups breadcrumbs Oil, for frying Marinara sauce Instructions 1. Peel and cut onions into 1-centimeter rings. Separate the rings. 2. Slice the mozzarella into 4 even strips. 3. Place a smaller onion ring in the center of a larger one. 4. Fill the gap between the rings with strips of mozzarella. Repeat with remaining onion rings and freeze them for 1 hour. 5. Place the flour, eggs, and breadcrumbs into three separate bowls. 6. Dip each prepared ring into the flour, then the egg, then the breadcrumbs, then back into the egg, and one last time into the breadcrumbs. Repeat with the remaining onion rings. 7. Heat the oil in a pot over high heat. 8. Fry the rings until golden brown, being careful not to fry them for too long as the cheese may ooze out completely. 9. Deep-Fried Lotus Onion Servings: 1 INGREDIENTS Bloomin Onion: 1 large sweet onion 1 ½ cups milk 2 eggs 1 ½ cups flour 1 ½ Tbsp. garlic powder 1 Tbsp. paprika 2 Tsp. pepper 1 Tbsp. salt 3-4 cups canola oil Dipping Sauce: 2 Tbsp. sour cream 2 Tbsp. mayonnaise 1 ½ Tbsp. ketchup 1 ½ worcestershire sauce 1 ½ tsp. salt 1 tsp Pepper 1 tbsp. Paprika Instructions Cut the top of an onion and place it cut-side down Using a sharp knife make 4 ½-inch cuts then go back and make 3 cuts in between each quarter Flip the onion over and coax apart its layers or “petals” In a medium bowl combine the eggs and the milk Place the onion in it, coating every petal with egg wash In large bowl combine flour, paprika, oregano, salt, garlic powder, and black pepper Place the onion in the dry mixture coating every petal Coat the onion in the egg wash and dry mixture one more time Heat canola oil to 375ºF/190ºC in a deep-fryer or dutch oven Place onion in the freezer for 10 minutes With tongs add the onion to the oil for 2 minutes or until it is browned and crispy Move onion to plate covered in paper towels and allow to drain for 5 minutes Meanwhile, in a small bowl combine sour cream, salt, pepper, paprika, mayonnaise, worcestershire sauce, and ketchup Enjoy! Crunchy Taco Cups

Here is what you'll need! Servings: 12 taco cups INGREDIENTS 1 pound lean ground beef 1 envelope (3 tablespoons) taco seasoning 6 ounces diced tomatoes 1 (4 ounce) can diced green chiles 1 1/2 cups shredded sharp cheddar cheese 6 large flour tortillas PREPARATION 1. Preheat oven to 375º F. 2. In a large skillet, brown the ground beef and drain any remaining fat. Transfer to a bowl. 3. Add taco seasoning, tomatoes and green chiles to the ground beef and stir to combine. 4. Cut flour tortillas into a square shape and cut each into 4 smaller equally sized square pieces. 5. Generously coat a standard size muffin tin with nonstick cooking spray. 6. Line each cup of prepared muffin tin with a tortilla sheet. 7. Add 1.5 tablespoons taco mixture. Top with 1 tablespoon of cheese. Press down and add another layer of tortilla sheet, taco mixture, and a final layer of cheese. 8. Lightly brush the top edges of the tortilla with cooking oil. 9. Crack the eggs... now add the heavy cream, as an alternative you can replace it with ricotta cheese or a couple of tablespoons of mascarpone cheese... 2 tablespoons of parmesan cheese... beat everything... until you have an even mixture. If you want to make the eggs richer, you can add more cheese or vegetables, but take care to finely dice them, so they'll bake evenly. Now add salt... pepper, and the roughly torn basil leaves... be generous with basil! Give another stir... and take the pan: we'll use a muffin pan, because our baked eggs will look a bit like muffins. Take a slice of bacon... lay the second one crosswise... and line the rest of the muffin cup. If you don't have a muffin pan, you can use aluminum baking cups, that you can find at the supermarket, or ceramic ramekins, like this. You don't need to grease the pan, since bacon is fat enough and it won't stick to the pan. They're ready, now pour the egg mixture into each basket. Bake at 350°F (180°C) for 12-15 minutes, until the eggs are cooked and golden brown. Our eggs in bacon baskets are ready, serve with a fresh salad. For a vegetarian version, you can use grilled zucchini instead of bacon, but take care to line the mould with parchment paper... good, easy and quick! We used: For 12 servings: • 5 eggs • less than 1 cup (200 ml) of heavy cream • 24 slices of bacon • 2-3 tbsp of parmesan cheese • a few basil leaves • salt and pepper to taste
