All the flavors you love in chicken Parm in a super-delicious, juicy meatball. DIRECTIONS 1. Preheat oven to 400 degrees F. Make meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, 2 tablespoons parsley, half the garlic, and egg and season with salt and pepper. Mix until fully combined, then form into meatballs. 2. In a large oven-safe skillet, heat 1 tablespoon oil over medium heat. Add meatballs and brown each side, 5 minutes. Transfer to a plate. 3. Add remaining two tablespoons oil to skillet. Add remaining half garlic and cook until fragrant, 1 minute, then add crushed tomatoes and crushed red pepper flakes and stir until combined. 4. Bring to a low simmer, then return meatballs to skillet and nestle in sauce. Top with mozzarella and bake until cheese is melted and chicken no longer pink, 10 minutes more. 5. Taco Tuesday, on repeat. DIRECTIONS 1. Preheat oven to 350º. In a large skillet over medium heat, heat oil. Add onion and cook until tender, 6 minutes, then add cumin and season with salt and pepper. Stir until combined. Add chicken, green chilis, and salsa and stir until combined and heated through. 2. In a baking dish, spread a thin layer of refried beans (to help the taco shells stand up!). Spoon remaining refried beans into the bottom of a taco shell and top with chicken mixture. Place in baking dish. Repeat with remaining taco shells and ingredients, tightly standing up the taco shells in the dish. 3. Top all over with cheese. 4. Bake until cheese is melted, 10 minutes. 5. Fontina Cheese 1 ½ cup chicken, chopped ½ cup sundried tomatoes, chopped 1/3 cup parsley, chopped 2 large eggs, beaten 3 cups marinara sauce ½ cup heavy cream _DIRECTIONS_ Heat oven to 375. In a large skillet, melt the butter in the oil. Add shallots and leeks, cook over medium heat, cook and stir until lightly browned (about 7-10 minutes). Transfer mixture to a bowl and let cool. Meanwhile, in a large pot of salted boiling water, cook the pasta until al dente. Drain and cool under running water. Pat shells dry. In a large bowl, fold together ricotta, 1 cup of the Fontina, chicken, sundried tomatoes, parsley, shallot-leek mixture. Season with salt and pepper. Then, stir in the eggs. In another bowl, mix together marinara sauce and heavy cream. Pour ½ marinara sauce into a 9x13 inch baking dish. Stuff each shell with a one round tablespoon of the filling. Place stuffed shells in baking dish. Drizzle remaining sauce on top and sprinkle with the remaining Fontina cheese. Bake the shells until golden, about 30 minutes. Here is what you'll need! Servings:  4 INGREDIENTS White sauce 1 cup plain yogurt 1 teaspoon apple cider vinegar (or white vinegar) 1 lemon, juiced ½ teaspoon sugar ½ teaspoon salt Chicken 2 pounds boneless, skinless chicken thighs 1 lemon, juiced 1 teaspoon dried oregano 2 teaspoons ground coriander 1 ½ teaspoons salt ¼ teaspoon black pepper 4 cloves garlic, minced ¼ cup olive oil Rice 2 tablespoons butter 1 ½ teaspoons ground turmeric 1 teaspoon ground cumin 2 cups basmati or long grain white rice 2 cups chicken stock ½ teaspoon salt Sriracha, harissa or your favorite hot sauce (optional to serve) Fresh parsley (optional for garnish) PREPARATION 1. Whisk together all sauce ingredients in a small bowl. Refrigerate until ready to use.    2. Toss chicken with lemon juice, oregano, coriander, salt, pepper, garlic and olive oil.  Marinade at least 15 minutes, an hour is ideal. 3. Heat a large pot over high heat and add enough oil to coat the bottom lightly.   4. In a large saucepan, cook the chicken in batches until done. Remove from pan, set aside and keep warm. 5. In the same pot you cooked the chicken, add the butter, rice, turmeric and cumin.  Stir to coat, cook about 1-2 minutes.   6. Add chicken stock and salt and bring to a boil. 7. Turn heat down to low, cover and cook 15 minutes.  Fluff with a fork when finished and remove from heat. 8. When everything is done, dice the chicken. 9. Servings: 8 INGREDIENTS 1 onion, diced 1 jalapeno, diced 3 garlic cloves, chopped 3 chicken breasts 1 can black beans, drained 1 can corn, drained 1 can diced tomatoes 1 can red enchilada sauce 4 cups chicken stock 1/2 teaspoon oregano 1/2 teaspoon ground pepper 1 teaspoon cumin 1 teaspoon salt 1 pack large flour tortilla Vegetable oil for frying Toppings (optional) Cilantro Monterey jack cheese Lime wedges Avocado slices PREPARATION 1.) Place onion, jalapeno and garlic in the bottom of a slow cooker. 2.) Place the chicken breasts on top of the diced veggies. 3.) Add all canned ingredients to the chicken in the slow cooker. Top with the chicken stock. 4.) Set slow cooker to high and cook for 3 hours. 5. When soup is done, remove chicken and dice it on a cutting board. Return diced chicken to the soup. 6.) Fill a large pot 2/3 full with vegetable oil and heat until it reaches 350F. 7.) Carefully place the tortilla on top of oil and gently press the tortilla down with a ladle. Fry tortilla until golden brown. Drain on a cooling rack for minutes. 8.) Place fried tortilla bowl in a soup bowl and fill it with the soup. 9.) Servings: 2 INGREDIENTS 8 strips bacon 2 (5 ounce) chicken breasts Salt Pepper 1 shallot, diced 1/4 cup apple cider vinegar 1 tablespoon Dijon mustard 1/2 teaspoon salt 1/4 cup olive oil 1/4 teaspoon  pepper 1-2 heads romaine lettuce 2 hard boiled eggs, sliced 1 roma tomato, diced 1 avocado, sliced 4 ounces blue cheese PREPARATION 1. Slice strips of bacon into 1-inch pieces. 2. Aggressively season chicken breast on both sides with salt and pepper. 3. Over medium-high heat, cook bacon until desired crispness. Remove from the pan and strain over a paper towel. Drain excess fat . 4. Cook the chicken breast for 7 minutes on each side, or until internal temperature reaches 165˚F/75˚C. 5. In a bowl, whisk together shallots, apple cider vinegar, dijon mustard, salt and pepper. Slowly drizzle in the olive oil until emulsified. 6. Chop romaine into bite size pieces and dice chicken into cubes. 7. In a serving bowl, add a bed of romaine lettuce. 8. In lines across the bowl, place chicken, blue cheese, bacon pieces, avocado, egg, and tomatoes. 9. Drizzle the dressing over the top. 10. Serve & enjoy! Music provided by Audio Network. Spread BBQ sauce on each chicken breast. 4. Layer onions on top of the chicken 5. Bake for 40 minutes. Bacon Ranch Chicken Bake Ingredients 3-4 chicken breasts salt and pepper to taste 6-8 Tbsp. ranch dressing 6-8 slices bacon 4 oz cheddar cheese Preparation 1. Preheat oven to 400˚F/200˚C 2. Place chicken breast in a baking dish. Season chicken with salt and pepper, to taste. 3. Spread 1-2 Tbsp. ranch on each chicken breast. 4. Layer two slices of bacon on top of each chicken breast. 5. Top with cheese. 6. Bake for 40 minutes. Alfredo Chicken Bake Ingredients 3-4 chicken breasts salt and pepper to taste 24 oz - 48 oz alfredo sauce 1 lb broccoli heads 1 cup parmesan cheese Preparation 1. Preheat oven to 400˚F/200˚C 2. Spread a layer of alfredo sauce on the baking dish. Place chicken breast over sauce. Season chicken with salt and pepper, to taste. 3. Spread broccoli over pan. 4.
