A new way to eat tacos. DIRECTIONS 1. In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Add ground beef and cook until no longer pink, 6 minutes. Drain fat. 2. Add garlic, cumin, chili powder, cayenne, fire-roasted tomatoes, sour cream, and water to skillet and stir until combined. Let thicken 5 minutes. Stir in cilantro. 3. In a casserole dish, place a layer of tortilla chips, ground beef mixture, and cheeses. Repeat until ground beef mixture is used up. 4. Bake until cheese is melted and tortilla chips soft, 20 minutes. Let cool 5 minutes before slicing and serving. Insanely delicious creamy meatballs, no trip to Ikea required. DIRECTIONS 1. In a large bowl, mix together ground beef and pork, breadcrumbs, egg yolks, allspice, and nutmeg and season with salt. Stir to combine, then mix in onion. Form mixture into small meatballs. 2. In a large skillet over medium heat, melt 1 tablespoon butter and olive oil. Add meatballs and brown until golden, 3 minutes per side. Transfer to a plate. Drain fat in skillet. 3. Make gravy: Melt remaining butter in skillet. Whisk in flour until golden, 2 minutes, then add beef broth and whisk until no clumps remain. Bring to a simmer and let thicken, 2 minutes. 4. Add heavy cream and parsley and return meatballs to skillet. Spoon gravy over meatballs and let simmer in sauce until cooked through, 5 to 6 minutes more. Season with freshly ground black pepper. 5. Serve over pappardelle or egg noodles. Beef Kebab with Garlic Sauce

Here is what you'll need! Serving: 9 kebabs INGREDIENTS Kebab 2 pound beef sirloin, cut into 1 inch cubes 1 tablespoon. garlic, minced 1/2 teaspoon ground coriander 1 teaspoon cumin 1/2 teaspoon paprika 1 teaspoon distilled white vinegar 1/2 cup olive oil 3 bell peppers (red, yellow and green), cut into 1 inch pieces 1 red onion, cut into 1 inch pieces Garlic sauce 1 cup garlic cloves, peeled 1 tsp salt 4 cups vegetable oil 1 lemon, juiced PREPARATION 1. In a re-sealable freezer bag, add beef, garlic, coriander, cumin, paprika, white vinegar, and olive oil. Seal the bag and distribute seasonings. Allow to marinate in the refrigerator for 24 hours. 2. In a food processor, add garlic cloves and pulse until the garlic becomes finely minced. 3. Add salt and pulse until well incorporated. Scrape down the sides of the bowl if you see the garlic building up on the sides. 4. Turn on the food processor and keep it on. In a thin stream pour 1/2 cup of oil followed by 1/2 tsp of lemon juice. Keep alternating until you have used all of the oil and lemon juice. The garlic sauce should become light, fluffy and creamy. 5. Store garlic sauce in an airtight container in the refrigerator for up to 1 week! 6. Preheat the grill on high. 7. To assemble the kebabs, spray skewers with non-stick cooking spray and alternate threading beef, onions and bell peppers onto the skewer. 8. Cook 5-7 minutes on each side. 9. Spinach Dip-Stuffed Meatballs Makes 15-18 meatballs Ingredients 8 ounces cream cheese ¼ cup cooked spinach 1 tablespoon garlic powder 1 cup shredded mozzarella ½ pound ground beef ½ pound ground pork 1 egg ¼ cup parsley ½ cup breadcrumbs 1 teaspoon salt ½ teaspoon pepper 2 cups marinara sauce ½ pound cooked fettuccine or your favorite long pasta Instructions 1. Mix cream cheese, spinach, garlic powder, and mozzarella until smooth. 2. Mix ground beef, pork, egg, parsley, breadcrumbs, salt, and pepper until evenly combined. 3. Take a golf ball-sized handful of the meatball mixture and press it flat in the palm of your hand. 4. Place a spoonful of the spinach dip in the center of the meat and fold the edges over the dip, sealing it and rolling into a ball. 5. Repeat with the remaining meat and dip. 6. In a pan over medium-high heat, sear meatballs for about a minute, then flip. 7. Add the marinara sauce and mix. 8. Here is what you'll need! Servings: 12 taco cups INGREDIENTS 1 pound lean ground beef 1 envelope (3 tablespoons) taco seasoning 6 ounces diced tomatoes 1 (4 ounce) can diced green chiles 1 1/2 cups shredded sharp cheddar cheese 6 large flour tortillas PREPARATION 1. Preheat oven to 375º F. 2. In a large skillet, brown the ground beef and drain any remaining fat. Transfer to a bowl. 3. Add taco seasoning, tomatoes and green chiles to the ground beef and stir to combine. 4. Cut flour tortillas into a square shape and cut each into 4 smaller equally sized square pieces. 5. Generously coat a standard size muffin tin with nonstick cooking spray. 6. Line each cup of prepared muffin tin with a tortilla sheet. 7. Add 1.5 tablespoons taco mixture. Top with 1 tablespoon of cheese. Press down and add another layer of tortilla sheet, taco mixture, and a final layer of cheese. 8. Lightly brush the top edges of the tortilla with cooking oil. 9. You might think there isn't much you can do to improve a delicious, juicy rib-eye steak, but as usual, I have some ideas! First, you can cook it with some vegetables (today I'm using carrots and celery root, drizzled with some olive oil). Then, while it's broiling, whip up a flavor-boosting compound butter to dollop on top. Horseradish and Dijon mustard mixed with some unsalted butter get the job done! Sarah's Tip of the Day: Watch the video and I'll show you how to prep a celery root (it looks knobby and unapproachable, but it's actually pretty easy). Plus you'll see what your steak should look like when it's perfectly cooked. Give this recipe a go, and you may never go back to your favorite steakhouse again! On a rimmed baking sheet, toss celery root and carrots with oil and arrange in an even layer. Pat steaks dry and add to sheet; season vegetables and steaks with salt and pepper. Broil until vegetables are tender and steaks are browned, 8 to 10 minutes, flipping vegetables halfway through. Tent steaks with foil and let rest 10 minutes.
