Cajun Mac & Cheese | Delish

You'll be making this zesty pasta on repeat. DIRECTIONS 1. In a large pot of salted boiling water, cook pasta until al dente. Drain and return to pot. 2. Meanwhile, in a large oven-safe skillet over medium heat, heat oil. Add bell peppers and onion and season with salt and pepper. Cook until soft, 5 minutes, then stir in garlic. Add andouille sausage, shrimp, 2 tablespoons green onions, 1 tsp. Cajun seasoning and cook until shrimp is pink, about 2 minutes per side. Transfer mixture to a plate. 3. Make cheese sauce: Melt butter in skillet. Add flour and whisk until golden, then add milk and simmer until thickened, 2 minutes. Add remaining Cajun seasoning and 1 cup each cheddar and Monterey jack and stir until melted and combined. 4. Add cooked pasta and shrimp mixture and toss until combined. Sprinkle with remaining cheddar and Monterey jack. 5. In a small bowl, mix together bread crumbs, melted butter, remaining green onions, and a pinch of salt. 6. Scatter bread crumbs on top of mac ’n cheese and bake until cheese is melted and bread crumbs golden, 15 minutes. INGREDIENTS 1 lb. cavatappi or other short-cut pasta 1 tbsp. extra-virgin olive oil 2 bell peppers, diced 1/2 white onion, diced kosher salt Freshly ground black pepper 2 garlic cloves, minced 1 lb. andouille sausage, sliced 1/2 lb. peeled and deveined medium shrimp, tails removed 1/4 c. Sliced green onions 1 tbsp. Cajun seasoning 2 tbsp. butter 2 tbsp. all-purpose flour 2 c. milk 1 1/4 c. shredded Cheddar 1 1/4 c. Fried Lasagna | Delish

It ain't pasta if it ain't fried, y'all. DIRECTIONS 1. Lay cooked lasagna noodles flat, in an even layer, on a greased baking sheet. 2. In medium bowl, combine ricotta, 1 egg and garlic. Season with salt and pepper. Mix until evenly combined. Spread the ricotta mixture onto each lasagna noodle, then sprinkle with mozzarella. Fold each lasagna noodle 3-4 times, to create a square. Freeze the lasagna servings on the baking sheet for 30 minutes, or until hardened. 3. When the lasagna squares are frozen, set up a dredging station. Divide the flour, eggs and breadcrumbs in three separate shallow bowls. Season breadcrumbs with salt and pepper. Working in batches, dredge lasagna in the flour mixture then dip in eggs. Toss in breadcrumbs for the final dredge. 4. Meanwhile, heat oil. Pour about 1 1/2” vegetable oil into a large, deep skillet (or a shallow pot). Heat over medium heat until the oil reaches about 350 degrees F, or until the oil is shimmering. (If a splash of water sizzles when you flick it into the pan, it’s ready.) Working in batches, add 3-4 lasagna squares to the hot oil using tongs. Do not crowd the pan, or the oil will cool! Cook until golden brown on one side, about 2-3 minutes, then flip and cook until the second side is golden, 2-3 more minutes. Place the fried lasagna squares on a cooling rack lined with paper towels. Repeat until all the lasagna is fried. 5. Sprinkle with parsley and serve with warm marinara for serving. Your favorite lemony pasta, without any time spent at the stove. DIRECTIONS 1. Preheat oven to 425 degrees F. 2. In a large bowl, combine shrimp, melted butter, white wine, lemon zest and juice, shallot, garlic, 2 tablespoons of parsley, and red pepper flakes. Season with salt and pepper. 3. Add shrimp to a large baking dish in a single layer. 4. In a medium bowl, mix panko with olive oil and remaining parsley. Season with salt and pepper. 5. Sprinkle panko mixture over the shrimp. Bake until the shrimp is opaque, 10-15 minutes, depending on the size of the shrimp. 6. Serve warm shrimp over pasta with bread on the side. (The bread is perfect for dunking in all the buttery juices!) Fontina Cheese 1 ½ cup chicken, chopped ½ cup sundried tomatoes, chopped 1/3 cup parsley, chopped 2 large eggs, beaten 3 cups marinara sauce ½ cup heavy cream _DIRECTIONS_ Heat oven to 375. In a large skillet, melt the butter in the oil. Add shallots and leeks, cook over medium heat, cook and stir until lightly browned (about 7-10 minutes). Transfer mixture to a bowl and let cool. Meanwhile, in a large pot of salted boiling water, cook the pasta until al dente. Drain and cool under running water. Pat shells dry. In a large bowl, fold together ricotta, 1 cup of the Fontina, chicken, sundried tomatoes, parsley, shallot-leek mixture. Season with salt and pepper. Then, stir in the eggs. In another bowl, mix together marinara sauce and heavy cream. Pour ½ marinara sauce into a 9x13 inch baking dish. Stuff each shell with a one round tablespoon of the filling. Place stuffed shells in baking dish. Drizzle remaining sauce on top and sprinkle with the remaining Fontina cheese. Bake the shells until golden, about 30 minutes. Servings: 4 INGREDIENTS 4 cups broth of your choice 10 ounces uncooked linguine 10 ounces broccoli florets 1 pound asparagus, chopped into 1-inch pieces 1 small onion, diced 4 cloves garlic, minced ½ teaspoon red pepper flakes Salt & pepper to taste 1 teaspoon olive oil 4 ounces mushrooms, sliced ¼ cup heavy whipping cream ½ cup grated parmesan 3 tablespoons fresh parsley, finely chopped PREPARATION 1. In a pot over high heat, combine broth, linguine, broccoli, asparagus, onion, garlic, red pepper flakes, salt, pepper, and olive oil.  Stir. 2. Add the mushrooms and bring to a boil. 3. Once at a boil, reduce heat to medium and cook the pasta for 10 minutes, continuously tossing with tongs. 4. Add the heavy cream, parmesan, and parsley, and toss for an additional 3 minutes. 5.
